In the hospitality industry, the interesting things usually happen at the worst moments: crowded, dark, and with a lot of movement on display. A camera that keeps a good eye on things during the day doesn't yield anything useful at the exit at 2 a.m. Besides theft, there's more than just that: disagreements at the bar, an incident on the terrace, or arguments over who did what at the cash register. That's why we choose our stances at the moments that really matter.
The hospitality industry is the toughest test for a camera. Backlighting at the entrance, candlelight inside, and a dark terrace require cameras that can handle low light without every face turning into a white spot. At the bar and the checkout, we choose a tight crop: rather than having one action sharp than the entire shop blurred in the frame.
Camera footage in a public space requires clarity. A sign at the entrance, agreements on who will view the footage, and a realistic storage period are all part of the requirements. Point cameras at walking routes, the checkout, and entrances instead of at your staff's fixed workstations; we generally do not record audio.
